I
think we are all always looking for new chicken recipes. I was so
happy to find this one because it is super easy and uses things I
always have on hand. So this is a great dinner for those days when
you just don't want to have to go to the store, or maybe a day when
someone has unexpectedly dropped in. It is a simple one to make more
of, just increase the number of chicken thighs you need based on the
appetite of those eating. Double or triple the sauce and you are set.
I usually serve this with a simple salad and a side of rice or
couscous.
Honey
Glazed Chicken Thighs
¼
cup honey
2
Tablespoons Soy sauce
2
cloves garlic, minced (or grated)
4
boneless, skinless chicken thighs
2
Tablespoons olive or vegetable oil
¼
teaspoon salt
¼
teaspoon freshly ground pepper
Combine
the honey, soy sauce and garlic and set aside for later.
Brush
chicken thighs with the oil and season with salt and pepper.
Cook
on charcoal grill 6 to 8 minutes until the chicken is almost cooked
through
Begin
brushing the honey glaze on the chicken. Turn and glaze several times
and cook for 2 to 4 minutes more, or until the chicken is cooked
through.
